Bulgur (raw), 1 cup

Onions, 2 medium, finely chopped

Cherry tomatoes, 20, diced

Lemon juice, from 2 large lemons

Extra virgin olive oil, 2 tablespoons

English parsley, 1 bunch, finely chopped

Tomato paste, 2 tablespoons

Salt, 1 teaspoon

Black pepper, 1 teaspoon


  1. Soak bulgur in 2 cups of hot boiling water. Cover and leave for an hour or until bulgur is soft and fluffy.
  2. Drain off any excess water.
  3. Add the rest of the ingredients and mix well.
  4. Serve immediately or chill in the refrigerator before serving.
