Chicken Essence with Mushroom

Serves 4
Ingredients:

  • Dried shiitake mushrooms, 8
  • Chicken Wings (without skin), 8
  • Minced Ginger, 1/2 tbsp
  • Low Sodium Salt, 1/2 tsp
  • Sesame Oil, 1/4 tsp
  • Chicken Essence, 2 btls
  • Water, 4 cups
  • Wolfberries, 2 tbsp
  • Spring Onion (white part)
  • Shaoxing Wine, 1/2 tsp (optional)

Method:

  1. Mix the ginger, salt, and sesame oil with the chicken wings and marinade for 1 hour
  2. Soak the shiitake mushrooms in water for 1 hour, squeeze out the excess water from the mushrooms and reserve
  3. Place all the ingredients including the mushroom water into a pot and cover with a lid. Stea, for 1 hour or till the broth is fragrant
