Thai-styled Roasted Brinjal with Wholemeal Bread

Ingredients:

  • Brinjal, 200 g
  • Dried shrimp, rough chopped, 25 g
  • Garlic, whole, 2 pcs
  • Red onion, whole, 2 pcs
  • Lemon, 1 pcs
  • Red chili or red capsicum chili, 2 pcs
  • GoodSalt® (Lower Sodium), 1 tsp
  • Coriander, chopped, 2 tbsp
  • Gardenia Fine Grain Wholemeal Bread, 4 slices
  • Hard boiled egg (optional), 2 eggs

Method:

  1. Add Brinjal, garlic, onion, red chili in Air fryer or oven then set at 200°c for 15-20 minutes until skin charred
  2. Let them cool down a bit before peeled off all vegetable skin
  3. Pound dried shrimp in mortar or food processor and add all peel roasted vegetable
  4. Seasoning with GoodSalt® (Lower Sodium) and lemon juice, topping with coriander leaves serve with hard boiled egg and Gardenia Fine Grain Wholemeal Bread
