INGREDIENTS
- Healthier oil, 3 tbsp
- Garlic, minced, 1 tsp
- Prawns, deshelled and cleaned, 3
- Lower-sodium fish cake, sliced into strips, 25g
- Cabbage, shredded, 1 cup
- Bean sprouts, 50g
- Eggs, beaten, 2
- Whole-grain Hor fun or Kway teow (flat noodles), 200g
- Healthier fish sauce, ½ tbsp
- Lower-sodium soy sauce, 1 tbsp
- Healthier dark soy sauce, 1 tbsp
- Chinese chives, chopped, 1 tbsp
Method
- In a hot wok, heat the oil. Stir-fry the prawns, fish cake and garlic until cooked and fragrant. Set aside.
- With the remaining oil in the wok, stir-fry the cabbage and bean sprouts quickly. Remove the cooked vegetables from the heat and set aside.
- Heat the rest of the oil and fry the eggs until they are scrambled. Add the noodles and toss together in the wok with the fish sauce, soy sauce and dark soy sauce.
- Add Chinese chives with all the other ingredients. Stir-fry to heat through. Serve hot.
