Longevity Soba Lou Hei

Ingredients

  • Buckwheat Soba Noodle, 280g
  • Dou Miao, 10g 
  • Cucumber, 10g 
  • Cherry Tomato, 10g 
  • Edamame, 10g 
  • Carrot, 10g 
  • Pomelo, 10g 
  • Tuna, 40g 
  • Buckwheat seed, 10g 
  • Orange Peel, 10g 
  • Cold Soba Soup, 70g 
  • Black Vinegar, 40g  
  • Olive oil, 40g  

Fruit Haven Sauce 

  • Vinegar Passion Fruit, 15ml
  • Reduced Salt Yuzu Pon, 15ml
  • Yuzu Jam, 15ml 

Method

  1. Prepare plenty of boiling water.
  2. Boil the soba approximately 40 seconds. Stir the noodles in the water to avoid it from clumping together. 
  3. Rinse soba noodles with ice water. 
  4. Shred the carrots and slice cucumbers. 
  5. Grill the tuna in olive oil, marinate with black vinegar. 
  6. Assemble all ingredients on the top of soba noodles.
  7. Prepare Fruit Haven sauce by combining all ingredients and set aside. 
  8. Drizzle Fruit Haven Sauce and soba soup over soba noodles.
