Heart-healthy Mince Pies

Ingredients

Filling

  • Diced Apples, 2
  • Raisins, 1 cup
  • Nuts, ½ cup
  • Orange juice and zest, ½ an orange
  • Lemon zest,½ a lemon
  • Ground cinnamon, 1 tsp

Crust

  • Rolled oats, 1 cup
  • Sugar, 2 tbsp
  • Melted unsalted butter, 40g
  • Ground cinnamon,1 tsp
  • Cold water (if needed), 1 tbsp

Method

  1. In a saucepan, combine the apples, raisins, orange juice, orange zest, cinnamon and half a cup water. Cover and simmer over medium heat for 25 minutes, stirring occasionally, until the apples have softened and most of the liquid has evaporated
  2. Chop and lightly toast the nuts in toaster or oven for five minutes. Stir them into the cooked fruit mixture and set aside to cool.
  3. Preheat the oven to 180°C.
  4. In a food processor, combine the oats, sugar and cinnamon. Pulse until the oat resemble a coarse flour.
  5. Add the melted butter and pulse until the mixture starts to come together. If the mixture feels too dry or does not clump together easily, add the cold water and pulse again.
  6. Prepare a muffin tray by lining it with paper muffin cups. Divide the oat mixture evenly among the muffin cups, pressing firmly over the base and up the sides to form small pastry shells. Spoon about two tablespoons of the fruit filling into each shell.Bake for 20 minutes or until the crust is lightly golden.
  7. Leave to cool for a few minutes before removing from the tin. Serve warm or at room temperature.
