Tuna Brown Rice

Ingredients

  • Canned tuna in mineral water (light), drained, 90g
  • Brown rice, cooked, 100g
  • Green capsicum, julienned, 50g
  • Cherry tomatoes, 100g
  • Japanese cucumber, sliced, 50g
  • Apple, 1

Chilli sauce (optional)

  • Large chilli, 1
  • Garlic, 1 clove
  • Ginger, 15g
  • Lime, juiced, 1

Method

  1. Cook the brown rice based on the instructions on its packaging. Portion out 100g of the cooked brown rice.
  2. Mix the cooked brown rice with tuna.
  3. Make the chilli sauce by blending all the ingredients together.
  4. Serve the tuna brown rice, raw capsicum, cherry tomatoes and Japanese cucumber with an apple to form your Heart Smart Eating Portion.
  5. Serve chilli sauce by the side (optional).
