Fruity Pancakes

Serves: 4

Ingredients

  • All-purpose flour, ½ cup
  • Whole wheat flour, ½ cup
  • Brown sugar, 1 tbsp
  • Baking powder, ½ tbsp
  • Salt, ¼ tsp
  • Low-fat milk, ¾ cup
  • Egg, 1 whole
  • Unsweetened apple sauce, ¾ cup
  • Banana puree, 1 medium

Method

  1. In a large bowl, sift and combine all the dry ingredients – both types of flour, brown sugar, baking powder and salt.
  2. In a medium bowl, whisk the egg and combine all the wet ingredients – milk, apple sauce and banana puree.
  3. Pour the wet mixture into the dry ingredients and mix well, until smooth.
  4. Over a medium heat, pour a ladleful of batter onto a non-stick frying pan and spread it slightly.
  5. Flip and cook until slightly brown on both sides. It is now ready to be served!
