Tabouleh

Time: 1 hour 10 minutes

Ingredients:

  • Bulgur (raw), 1 cup
  • Onions, finely chopped, 2 medium
  • Cherry tomatoes, diced, 20
  • Lemon juice of 2 large lemons
  • Extra virgin olive oil, 2 tbsp
  • English parsley, finely chopped, 1 bunch
  • Tomato paste, 2 tbsp
  • Salt, 1 tsp
  • Black pepper, 1 tsp

Method

  1. Soak bulgur in 2 cups of hot boiling water. Cover and leave for an hour or until bulgur is soft and fluffy.
  2. Drain off any excess water.
  3. Add the rest of the ingredients and mix well.
  4. Serve immediately or chill in the refrigerator before serving.
