Ingredients:
- Bulgur (raw), 1 cup
- Onions, finely chopped, 2 medium
- Cherry tomatoes, diced, 20
- Lemon juice of 2 large lemons
- Extra virgin olive oil, 2 tbsp
- English parsley, finely chopped, 1 bunch
- Tomato paste, 2 tbsp
- Salt, 1 tsp
- Black pepper, 1 tsp
Method
- Soak bulgur in 2 cups of hot boiling water. Cover and leave for an hour or until bulgur is soft and fluffy.
- Drain off any excess water.
- Add the rest of the ingredients and mix well.
- Serve immediately or chill in the refrigerator before serving.
