Chicken Essence with Mushroom

Serves 4
Ingredients

  • Dried shiitake mushrooms, 8
  • Chicken wings (without skin), 8
  • Ginger, minced, ½ tbsp
  • Lower-sodium salt, ½ tsp
  • Sesame oil, ¼ tsp
  • Chicken essence, 2 btls
  • Water, 4 cups
  • Wolfberries, 2 tbsp
  • Spring onion (white part)
  • Shaoxing wine, ½ tsp (optional)

Method

  1. Mix the ginger, salt, and sesame oil with the chicken wings and marinade for 1 hour
  2. Soak the shiitake mushrooms in water for 1 hour, squeeze out the excess water from the mushrooms and reserve
  3. Place all the ingredients including the mushroom water into a pot and cover with a lid. Steam for 1 hour or till the broth is fragrant
