Chicken Essence with Mushroom

Serves 4
Ingredients
- Dried shiitake mushrooms, 8
- Chicken wings (without skin), 8
- Ginger, minced, ½ tbsp
- Lower-sodium salt, ½ tsp
- Sesame oil, ¼ tsp
- Chicken essence, 2 btls
- Water, 4 cups
- Wolfberries, 2 tbsp
- Spring onion (white part)
- Shaoxing wine, ½ tsp (optional)
Method
- Mix the ginger, salt, and sesame oil with the chicken wings and marinade for 1 hour
- Soak the shiitake mushrooms in water for 1 hour, squeeze out the excess water from the mushrooms and reserve
- Place all the ingredients including the mushroom water into a pot and cover with a lid. Steam for 1 hour or till the broth is fragrant
