Cranberry Pumpkin Seed Bliss Balls

Ingredients

  • Pumpkin Seeds, 125g
  • Dried Cranberries, 150g
  • Unpitted Dates, ½ cup
  • Rolled Oats, 75g
  • 100% Peanut Butter, 90g
  • Water, 45ml (3 tbsp)
  • *Vanilla Extract, 1 tsp

*Vanilla extract only to be added if needed.

Method

  1. Crush pumpkin seeds. Leave aside 10g of pumpkin seeds.
  2. Pit the dates and chop into smaller pieces. In a bowl, soak the dates in hot water for 10 minutes to soften them.
  3. Blend dates and water until smooth date paste forms.
  4. Add pumpkin seeds, dried cranberries, nut butter, oats and date paste into a blender until it forms into a soft dough mixture. Process the mixture, add 1 tablespoon of water at a time towards the end. If the mixture feels wet and sticky, add more oats into the mix.
  5. Add a small amount of water and continue to process if needed.
  6. Use a teaspoon, roll the mixture into balls and coat with crushed pumpkin seeds for some added crunch. Place the bliss ball in the fridge for 2 hours.
