Heart-Healthy Chocolate Banana Muffin

Serves: 18 muffins

Ingredients

  • Reduced-fat Margarine, 150g
  • Wholemeal Flour, 250g
  • Baking Soda, 10g
  • Low-fat Milk Powder, 70g
  • Low-fat Plain Yoghurt, 140g
  • Medium Eggs, 4
  • Medium Bananas, 4
  • Unsweetened Cocoa Powder, 120g

Method

  1. Preheat the oven to 180°C.
  2. Mash the bananas, then bake them in the oven for 30 minutes. Remove and let them cool.
  3. Once the baked banana has cooled, mix it with cocoa powder and set it aside.
  4. Line a 12-muffin pan with baking paper.
  5. Crack the eggs into a cup and beat lightly with a fork.
  6. In a large bowl, combine all the ingredients.
  7. Beat with an electric mixer for 2 minutes, until the mixture is light and creamy.
  8. Divide the batter evenly among the muffin cases.
  9. Bake for 18-20 minutes, or until the muffins have risen and are firm to the touch.
  10. Let them cool for a few minutes, then transfer them to a wire rack to cool completely.
