Ingredients
- Reduced-fat Margarine, 150g
- Wholemeal Flour, 250g
- Baking Soda, 10g
- Low-fat Milk Powder, 70g
- Low-fat Plain Yoghurt, 140g
- Medium Eggs, 4
- Medium Bananas, 4
- Unsweetened Cocoa Powder, 120g
Method
- Preheat the oven to 180°C.
- Mash the bananas, then bake them in the oven for 30 minutes. Remove and let them cool.
- Once the baked banana has cooled, mix it with cocoa powder and set it aside.
- Line a 12-muffin pan with baking paper.
- Crack the eggs into a cup and beat lightly with a fork.
- In a large bowl, combine all the ingredients.
- Beat with an electric mixer for 2 minutes, until the mixture is light and creamy.
- Divide the batter evenly among the muffin cases.
- Bake for 18-20 minutes, or until the muffins have risen and are firm to the touch.
- Let them cool for a few minutes, then transfer them to a wire rack to cool completely.
- Enjoy your heart-healthy muffins!
