Ingredients
- Buckwheat Soba Noodle, 280g
- Dou Miao, 10g
- Cucumber, 10g
- Cherry Tomato, 10g
- Edamame, 10g
- Carrot, 10g
- Pomelo, 10g
- Tuna, 40g
- Buckwheat seed, 10g
- Orange Peel, 10g
- Cold Soba Soup, 70g
- Black Vinegar, 40g
- Olive oil, 40g
Fruit Haven Sauce
- Vinegar Passion Fruit, 15ml
- Reduced Salt Yuzu Pon, 15ml
- Yuzu Jam, 15ml
Method
- Prepare plenty of boiling water.
- Boil the soba approximately 40 seconds. Stir the noodles in the water to avoid it from clumping together.
- Rinse soba noodles with ice water.
- Shred the carrots and slice cucumbers.
- Grill the tuna in olive oil, marinate with black vinegar.
- Assemble all ingredients on the top of soba noodles.
- Prepare Fruit Haven sauce by combining all ingredients and set aside.
- Drizzle Fruit Haven Sauce and soba soup over soba noodles.
