Mango and Chicken Bruschetta

Ingredients
20 slices wholemeal bread
320g mango flesh, cubed
1 tbsp apple cider vinegar
8g lime juice, freshly squeezed
35g mint leaves, julienned
20g chilli padi, deseeded and sliced
240g chicken breast, steamed and cubed
10g shallots, thinly sliced
20g coriander leaves

Method

  1. Mix the mango, apple cider vinegar, lime juice, mint leaves and chilli padi into a bowl to make the mango salsa.
  2. Place the chicken cubes on the untoasted bread slice.
  3. Top with the mango salsa.
  4. Garnish with shallots and coriander leaves.
