Ingredients
Red Yeast Wine Paste
- Red yeast wine paste, 20g
- Water, 300g
- Chinese wine, 50ml
- Red onion, 5g, sliced
- Garlic, 5g, sliced
- Ginger, 5g, sliced
- Oyster mushroom, 30g
- Brown button mushroom, 50g
- White button mushroom, 50g
- Corn starch, 50g
- Mushroom powder, To taste
- Coriander, 10g
Pan Seared Salmon Fillet
- Salmon fillet, 2, 150g each
- Broccoli, 50g
- Cherry tomato on vine, 30g
Method
- Fry the red onion, ginger and garlic till golden brown.
- Add water and red yeast wine paste.
- Add Chinese wine.
- Stir in mushrooms and add in all seasonings.
- Simmer all ingredients in low heat till well-cooked to form the red yeast wine paste.
- Pan sear the salmon fillet till golden brown.
- Serve the salmon with the red yeast wine paste.
- Garnish with coriander, broccoli and cherry tomatoes.
