Pan Seared Salmon with Red Yeast Wine

Ingredients

Red Yeast Wine Paste

  • Red yeast wine paste, 20g
  • Water, 300g
  • Chinese wine, 50ml
  • Red onion, 5g, sliced
  • Garlic, 5g, sliced
  • Ginger, 5g, sliced
  • Oyster mushroom, 30g
  • Brown button mushroom, 50g
  • White button mushroom, 50g
  • Corn starch, 50g
  • Mushroom powder, To taste
  • Coriander, 10g

Pan Seared Salmon Fillet

  • Salmon fillet, 2, 150g each
  • Broccoli, 50g
  • Cherry tomato on vine, 30g

Method

  1. Fry the red onion, ginger and garlic till golden brown.
  2. Add water and red yeast wine paste.
  3. Add Chinese wine.
  4. Stir in mushrooms and add in all seasonings.
  5. Simmer all ingredients in low heat till well-cooked to form the red yeast wine paste.
  6. Pan sear the salmon fillet till golden brown.
  7. Serve the salmon with the red yeast wine paste.
  8. Garnish with coriander, broccoli and cherry tomatoes.
