Red Hot Snapper with Corn

Ingredients
Chilli Sauce

  • Large chilli, 4
  • Garlic, 3 cloves
  • Ginger, 1 inch
  • Lime (juice only), 4
  • Lower-sodium salt, ⅛ tsp

Snapper

  • Red snapper, 120g
  • Frozen unsalted corn, 100g

Method

Chilli Sauce

  1. Wash and prepare the ingredients.
  2. Blend the ingredients with a food processor.
  3. Red Snapper

  4. Marinate the snapper with the chilli sauce (Tip: If you prefer it to be non-spicy, you may marinate with chopped garlic, chopped ginger and a pinch of salt).
  5. Microwave at high for around 3.5 minutes.
