Spicy Red Snapper

Serves: 2

Ingredients

  • Chilli (large), 4 whole
  • Garlic, 3 cloves
  • Ginger, 1 inch
  • Lime, 4 whole
  • Red snapper fillet, 200g
  • White sesame seeds, For garnish
  • Dried parsley, For garnish

Method

  1. Wash the chillies and cut into small pieces.
  2. Cut the limes into half and squeeze the juice into a food blender.
  3. Remove the skin of the garlic and ginger.
  4. Add the chilli pieces, garlic & ginger into the food blender and blend into a soft paste.
  5. Remove the scales from the snapper skin.
  6. Marinate the fish by spreading the chilli paste all over. Let it sit for at least 10 minutes.
  7. Set the marinated fish into a microwave-safe bowl and cover with baking paper.
  8. Place the bowl into the microwave for about 3.5 minutes (duration may vary depending on the microwave model and the thickness of the fish) or until the fish has cooked.
  9. Garnish the fish with white sesame seeds and dried parsley before serving.

Note!

  • Serve with ¼ plate of whole-grains (e.g. brown rice) and ¼ plate of vegetables for a balanced meal.
  • Instead of using the microwave, steam the fish (until cooked) for a firmer texture.
