Serves: 4
Ingredients:
- Medium golden kiwis, skin removed, 4
- Strawberries, stem and leaves removed, 250g
- Sugar, 20g
- Hot water, ½ cup
- Lemon juice, 2 tsp
- Low fat Greek yoghurt, 4 tbsp
- Mint leaves (for garnish)
Method
- To make the syrup, combine hot water and sugar in a cup until the sugar dissolved.
- In a blender, puree the strawberries until smooth.
- Add half the syrup and lemon juice to the strawberry puree and mix for another 30 seconds.
- Pour strawberry puree mixture evenly into a pan or any container with flat surface.
- Repeat steps to make golden kiwi mixture.
- Freeze mixture for at least 2 hours.
- To serve, scrap the granita with a fork and layer into a small serving bowl/cup.
- Top with 1 tbsp of the low fat Greek yoghurt and some mint leaves.
