Sweet Potato with Snow Fungus Soy Milk

Ingredients

  • Medium sweet potato, peeled and cut into chunks, 1
  • Dried snow fungus, 20g
  • Rock sugar, 10g
  • Toasted walnuts, 2 tbsp
  • Toasted pumpkin seeds, 1 tbsp
  • Water, 200ml
  • Fresh soya milk high calcium omega, no sugar added, 500ml
  • Pandan leaves, knotted, 3 pcs

Method

  1. Soak the fungus in water for at least 30 minutes, and discard the hard base.
  2. Cut the fungus into small pieces.
  3. Place water in a medium pot over medium low heat.
  4. Add drained snow fungus and pandan leaves, cover and cook, bring to a very low simmer.
  5. After 15 minutes, add the sweet potato and cook until the sweet potato is tender.
  6. Add in the NutriSoy Fresh Soya Milk High Calcium Omega, No Sugar Added and bring to a boil.
  7. Taste and add rock sugar according to own preference.
  8. Serve warm or chilled with toasted walnuts and pumpkin seeds.
  9. Enjoy!
